A Macrobiotic Secret of Natural Healing The healthiest sources of salt are organic sea salt, celtic salt, shoyu sauce, tamari sauce or miso paste. A wonderful health enhancing condiment of roasted sea salt and sesame seeds, ground together, lovingly, by hand with a granite mortar and pestle. The resulting taste is beautiful, just a sprinkle of Gomasio enhances any meal. Benefits of Gomasio: strengthens and cleanses blood, reduces blood acidity. Supplies a rich source of calcium, iron, vitamins A and B, plus vital minerals. Sesame seeds supply a rich source of calcium, readily absorbed by our bodies in this natural whole form. Sesame seeds contain an ideal balance of calcium to phosphorous which supports and nurtures the nervous system. Sea salt is a rich source of minerals which are vital for bone health, structural stability and healthy blood. Note: always use pure Organic sea salt and sesame seeds. When making Gomasio, be completely present and undistracted, the ingredients need to be ground straight from hot pan into granite grinder for alchemy. Always use fresh organic sesame seeds and health enhancing sea salt. You will need to track down a granite grinder or surubachi from Asian food stores. Note, shortcuts using time saving kitchen appliances do not work to make Gomasio. The magic is in the hand grinding, while the seeds are hot from pan, crushing the seeds releases the sesame oil which melds perfectly with sea salt with the action of hand grinding. Gomasio Recipe • Organic sea salt • Organic hulled sesame seeds • A granite motor Method • Place sea salt in a dry skillet over gentle flame briefly to remove moisture not to cook the salt. • Remove and place in the grinder. • Place sesame seeds in the skillet over a medium heat, stirring occasionally for an even golden color. • While the sesame seeds are toasting, grind the salt to a fine texture. Remove salt, placing a small cup. The sesame seeds are ready when fragrant, golden and glistening with their natural oil. • Remove from heat and place them in the grinder. • Tip the salt on top and begin to grind in a clockwise circular movement. This must be done while the seeds are warm. The crushed seeds release oil which combines with the salt. This occurs with your grinding action. • Grind until you have a nice mealy consistency. Gomasio is ready with 80% of the seeds ground and 20% of seeds remaining whole. • Place Gomasio in a clean dry glass jar with a lid and store in a cool dark cupboard. |
